Jennifer is the head cheesemaker and co-owner of Silvery Moon Creamery which is located in the upper floors of the big red barn at Smiling Hill Farm in Westbrook, Maine.  Founded in 2003 by Jennifer Betancourt and the Knight family, the folks at Silvery Moon now craft over a dozen varieties of fresh and aged cheese.  Silvery Moon uses old world techniques and plenty of time. Their cheese has received accolades from the American Cheese Society, The NY Times, Food and Wine and others.
