Jennifer is the head cheesemaker and co-owner of Silvery Moon Creamery which is located in the upper floors of the big red barn at Smiling Hill Farm in Westbrook, Maine.  Founded in 2003 by Jennifer Betancourt and the Knight family, the folks at Silvery Moon now craft over a dozen varieties of fresh and aged cheese.  Silvery Moon uses old world techniques and plenty of time. Their cheese has received accolades from the American Cheese Society, The NY Times, Food and Wine and others. To see the cheesefolk in action we invite you to visit Silvery Moon’s Open Creamery Day Sunday Oct. 11th from 11am – 3 pm.
 
 
 
Jennifer's cheeses will be featured at Harvest UnCorked!:


Rosemary’s Waltz –light and lemony. A semi-soft fresh cheese rolled in rosemary with a scattering of juniper berries. Paired with an orange cranberry compote.
 
 
Camembert - soft and earthy with a luxurious white bloomy rind. Paired with a caramelized onion and apple spread.


Lilt – from the milk of nearby Meadowview Farm in Windham, this dry semi-aged cheese has a thin sprinkling of lavender ladled in amongst the curd. Very subtle, and delightful with a drizzle of Maine honey.
